How to Make Cima alla Genovese

Ingredients
- 1 veal belly (about 1 kg)
- 200 g cooked peas
- 150 g carrots, diced and cooked
- 4 eggs
- 100 g grated Parmesan cheese
- 2 cloves of garlic, minced
- A handful of fresh marjoram leaves
- Salt and pepper to taste
- Kitchen twine
Method:
Begin by sewing two sides of the veal belly, leaving one side open to create a pocket. In a bowl, mix together the cooked peas, chopped and cooked carrots, beaten eggs, Parmesan, garlic, marjoram, salt, and pepper. Fill the veal belly with the mixture, then carefully sew the remaining side shut. Place the stuffed veal in a large pot and simmer gently for about 2–3 hours. Once cooked, allow it to cool completely before slicing. A curiosity: In Genoa, the slices are called éuggio, which means “eyes,” because of their shape!
